Healthy Vegetarian Meal Plans

I FINALLY have a day off on a weekend and I just woke up from my post-night shift slumber and…everyone in my house is asleep!! It’s taking every part of my willpower not to wake Remy up from her nap so we can play, but I know she’ll be a total grumpelstilskin if I do.

So instead I’m being super productive and writing this!! Also, I’m considering getting started on dinner (at 1PM). I mean, that would be the responsible thing.

What are you guys up to for the superbowl tomorrow? I’ll be at work (<– don’t be shocked) but I’m sure we’ll have it on in the workroom. Maybe I’ll bake some brownies to keep up morale. We’ll see!!

Prep Ahead Tip: Cook the quinoa ahead of time! This whole casserole can also be baked ahead and reheated in the oven as desired.

Vegan/Gluten-free Substitutions: Recipe is already gluten free. To make it vegan, substitute the cheddar cheese with your favorite dairy-free substitute.
