Whooooaaa boy, you guys. Sorry this is late, but WHAT A DAY. It’s my first full weekend off in forever (and my first THREE DAY WEEKEND off in at least a year) so we’re really trying to pack it all in. Today we visited a new-to-us park, rode on a carousel, and explored a toddler gym on the other side of town that was the BEST bang for your buck in terms of toddler entertainment. And that was all before noon. It was crazy!

Hope you’re all having an equally fun holiday weekend!! Here’s what we’re cooking this week:

  • healthy zucchini corn fritters, because summer ain’t over yet!
  • crunchy Asian tofu wraps
  • my fave roasted stuffed peppers
  • an Israeli POWER salad
  • you-won’t-believe-its-vegan corn chowder

Happy eating!
