Pesto Palmiers
 
 
Cheese and pesto join forces in these pesto palmiers to make an easy appetizer that everyone will love.
Yield: 20 palmiers
Ingredients
  • 2 tbsp pine nuts
  • 1 garlic clove, chopped
  • 2 (1 oz) packages fresh basil
  • 3 tbsp olive oil
  • 1 sheet frozen puff pastry dough, thawed
  • ⅜ tsp kosher salt
  • 4 oz tomato basil cheddar cheese, grated
Instructions
  1. Heat oven to 400F.
  2. In the bowl of a mini food processor, pulse together the pine nuts, garlic, and basil until finely chopped. With the processor running, pour in the olive oil, letting the machine run until combined.
  3. Unfold the puff pastry and roll into a 10x9-inch rectangle. Spread the pesto over the dough, all the way to the edges. Sprinkle with the salt and cheddar cheese. Simultaneously roll up both long sides of the dough so that they meet in the center. Move to a parchment-lined baking sheet and place in the freezer for 10 minutes.
  4. Cut the dough roll cross-wise into 20 slices. Arrange the slices in a single layer on the parchment-lined baking sheet. Bake for 16 minutes, or until lightly brown.
