Red Velvet Pudding
- 12 oz silken tofu
- ½ cup sugar
- 1 cup frozen raspberries
- 1 cup frozen strawberries
- 1 tsp vanilla extract
- ¼ cup fat free whipped topping
- Place the silken tofu, sugar, berries and vanilla in a food processor and puree until smooth.
- Pour into 4 individual serving dishes.
- If you have fresh berries on hand, garnish the top of your pudding with them.
- At serving time, top each one with 1 tablespoon of nonfat whipped cream.
