Vegan Almond Joy Overnight Oats
Prepare these vegan almond joy overnight oats the night before and wake up a chocolate, coconut, and almond oatmeal dream!
Yield: 4 servings
  • 2 cups old fashioned oats
  • 15 oz full fat coconut milk
  • 1 cup almond milk
  • 2 tbsp chia seeds
  • ¼ cup coconut flakes, plus more for topping
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder
  • ½ tsp almond extract
  • coconut granola for topping
  1. In a large bowl, stir together the oats, coconut milk, almond milk, chia seeds, coconut flakes, maple syrup, cocoa powder, and almond extract. Mix until well combined. Cover and refrigerate overnight
  2. The next morning, divide oats among four bowls. Top with coconut flakes and coconut granola.
