White Bean, Zucchini, and Harissa Fritters
 
 
Crispy white bean, zucchini, and harissa fritters are filled with bright herbaceous flavors with just the right amount of spice. They're perfect served with salad for a light lunch or dinner.
Yield: 8 fritters
Ingredients
  • 3 cups grated zucchini
  • kosher salt
  • 3 cups cooked, drained white beans
  • 2 garlic cloves, grated
  • ¼ cup minced chives
  • 4 tbsp grated parmesan cheese
  • 1 tbsp harissa
  • 2 large eggs, lightly beaten
  • 1.5 cups panko
  • olive oil, for frying
Instructions
  1. Spread the zucchini on a paper towel-lined baking sheet and sprinkle with salt. Allow to rest for at least 5 minutes, then squeeze out any excess moisture.
  2. Meanwhile, pour the white beans into a medium bowl and mash until the beans are mostly crushed. Stir in the zucchini, garlic, chives, parmesan cheese, harissa, eggs, and panko. Season to taste with salt. Divide the mixture into 8 fritters.
  3. Pour olive oil into a nonstick or cast-iron skillet to a depth of ¼-inch. Heat over medium-high heat until shimmering. Add half of the fritters to the skillet and cook for 3-4 minutes on each side or until golden. Transfer to a paper towel-lined plate to drain and sprinkle with more salt.
  4. Repeat with remaining fritters.
  5. Serve warm.
