Brussels Sprouts Pasta with Parmesan Cream Sauce
 
 
Brussels sprouts pasta with parmesan cream sauce will become your new favorite way to enjoy sprouts! The brussels sprouts and shredded and almost melt in your mouth.
Yield: 4-6 servings
Ingredients
  • 1 lb pasta
  • ¼ cup olive oil
  • 6 garlic cloves, minced
  • 1 lb brussels sprouts, shredded
  • salt and black pepper. to taste
  • 8 oz creme fraiche
  • ¼ cup pasta cooking water
  • ¼ cup heavy cream
  • ½ cup grated parmesan cheese
  • 2 tbsp minced chives
Instructions
  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain, reserving ¼ cup of pasta cooking water.
  2. In the meantime, heat the olive oil in a large saute pan over medium heat. Once hot, add the garlic and saute for 1-2 minutes, or until fragrant. Add in the brussels sprouts and saute for 4-5 minutes, or until tender. Season to taste with salt and black pepper.
  3. Stir in the creme fraiche, pasta cooking water, heavy cream, and parmesan cheese. Cook until the cheese has melted and the sauce has thickened slightly, about 2-3 minutes. Stir in the chives.
  4. Pour the sauce over the cooked pasta and toss to combine. Season again with salt and black pepper. Serve immediately.
