Apple Pie Grilled Cheese
 
 
Ever wanted to eat apple pie for lunch? Now you can with these apple pie grilled cheese sandwiches! Stuffed with homemade apple pie filling and loads of gooey brie, these are the perfect fall sandwiches.
Yield: 4 sandwiches
Ingredients
  • 4 tbsp butter, divided
  • 3 honeycrisp apples, peeled, cored and cut into ½-inch cubes
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 8 slices bread
  • 8 oz brie, thinly sliced
Instructions
  1. In a medium skillet, heat 2 tbsp butter until melted. Add the apples, brown sugar, and cinnamon to the pan. Saute until apples soften and the brown sugar reduces into a thick syrup, about 6-7 minutes. Remove from the heat.
  2. Divide the brie evenly among the slices of bread. Top half of the slices with the apple mixture and then carefully put another bread slice on top so that with each sandwich, you have a bread layer, a brie layer, a middle apple layer, another brie layer, and a second slice of bread.
  3. Heat the remaining butter in the skillet. Add a sandwich to the pan and cook on one side, over medium heat for 1-2 minutes or until the brie starts to melt. Flip and cook until the second side starts to brown, another minute or so. Repeat with remaining sandwiches. Serve warm.
