I am a sucker for butternut squash. The risotto looks mouthwatering!
I have a love-hate relationship with risotto. When it’s good, it’s gooood. But I’ve definitely had a few mishaps with it.
Oooh, I’ve made many a butternut squash risotto but none with vanilla. I’m intrugued!

Isn’t it funny how different ingredients take on a whole knew dimension when paired with the unexpected? Like cinnamon in Danish Kale soup. Never would have expected it but that one ingredient makes a fantastic difference in the soup!
Since I love risotto, I’ll be adding this recipe to my collection to try!

cooking risotto is a good way to test if you have PATIENCE haha.. but serioiusly you need a lot of patience stirring and waiting for the right texture. Yours just looks perfect! I think the addition of vanilla perks up the flavor of this risotto dish.
