Now that is a gloriously green salad, and I can’t even begin to express my love for cooked, chilled zucchini. Doesn’t matter how it’s cooked, but as long as it’s ice cold, I can’t get enough.

So many people write BEFORE ever trying the recipe.. Well I’ve TRIED IT… and I LOVE IT.
Made this today and it is wonderful. An excellent way to get extra veggies in a meal. I omitted the capers, and don’t miss them. OK, maybe i’ll toss a few into a portion to see how I like it – not one of my fav flavors 🙂
This is a hit and a great summer recipe. A nice addition to any party/BBQ also.
