It’s one of my favorite times of the year!!!!

“Best Of” round-up season. So good.

There’s something incredibly enticing in a voyeuristic kind of way about finding out which recipes you guys loved, both on my blog and on some of the other blogs that I follow. It also helps give me ideas for what to focus on in the year to come! For instance, it’s totally apparent that we’re spirit animals in our love of layer cakes and cheesy baked pasta dishes. DONE and DONE.

BUT you all also really like quick easy healthy (but “normal”) meals too! I’m totally down with that.

Get ready for more goodies to come in 2018!! I’m just starting to put together my recipe bucket list for the coming year, but if you have any particular recipe requests then leave them in the comments or shoot me an email!

Above all, I want to take a minute to thank you all for spending time in this space with me. I’ve been at this blogging thing for almost a decade now and while the “blogosphere” has gone through many incarnations in that time, my wonderful readers have always been a constant and for that I eternally grateful. Roasted cauliflower and chickpea soup made from a mix of pureed potatoes and warmly spiced roasted cauliflower florets and chickpeas. Lovely, warming, and basically a bowl of health.

Real life:

I’ve eaten pasta in some way, shape, or form for the past 14 consecutive meals and if someone doesn’t come stage a cauliflower soup kind of intervention soon, I’m going to need to be rolled out of my home to go back to work next week.

Haaalllppp.

On the bright side, my next two rotations are ICU and nights, which means scrubs aka PANTS WITH DRAWSTRING WAISTLINES. Good for your ego, bad for any sort of accurate self-assessment of whether you’ve been overdoing it on the cookie leftovers.

Huzzah!! One more day of work tomorrow and then I’m on a TWO WEEK vacation.

Which  means I’ll be off for Christmas. So basically I’m living the intern year dream.

I have so much cookie, cake, and pie baking planned for this week (especially since Remy will be at daycare!!), so I’m super grateful for this week’s meal plan, which is filled with healthy dinners. Because, BALANCE.

This week we have my FAVORITE vegetarian lentil bolognese, an awesome one-pot curry, butternut tostadas, hearty rustic minestrone soup, and a lovely Mediterranean veggie quiche, just to whet your appetite. Happy weekend and happy eating!
