If I could eat one food every day for the rest of my life…it would be peanut butter. If you feel the same way (or even if you don’t!) check out my healthy delicious recipe for this peanut noodle salad over at Marcus Samuelsson’s blog!
I am submitting this to Presto Pasta Nights which is being hosted this week by Alisha of Cook, Craft, Enjoy.

I went out to eat with friends last night and one friend ordered a very similar dish to this, but it wasn’t good. 🙁 Too bad she didn’t have your recipe to try instead! This looks fabulous! Love the colors.
I’m starting to think you and I are the same person…so strange. This looks absolutely incredible by the way 😀
I feel exactly the same way about peanut butter. I’m spooning my breakfast straight out of the p.b. jar this morning (it was almost empty) with added banana and powdered cocoa nibs. No sweetener required. I love run mornings.
And not a lettuce leaf in sight. 🙂 This looks fabulous, Joanne. Going over to see the recipe.
This sounds really good! I can’t wait to try it.
My kind of salad…although I don’t think I could eat peanut butter every day! 😉
Maybe we should be eating at ur place tonight instead of the PB&Co event… just saying:-)
I can tell by the photo I will love this dish! It’s perfect for lunch! Wish I was ome right now so O could make it and bring it in. Going to checkout the recipe!
I thought your one food was going to be peanut noodles. Because I think I actually like peanut noodles even more than peanut butter
This sounds like another winner. You can’t go wrong with the combo. Have a great day, Joanne. Blessings…Mary
Seriously Joanne?? How rude of you to make this and not invite me over!
Oh boy. A whole lotta this needs to be in my diet!
I’ve made this already and I agree – super tasty! 🙂 🙂 MMMMMMmmm 😉
I made a peanut noodle recipe this week, and my kid hates it. I’m still gonna make it again!
Yum! I’m totally itching for cold noodle salads now that that spring is just about here.
What’s funny is that I’m not a huge fan of peanut butter on it’s own, but I love it paired with chocolate or noodles. (Notice the or – together would be unappealing.)
I love peanut butter in my noodles – heading over to check it out.
Looks fantastic, book marked the recipe over at Marus’ blog. I love edemame and bok choy and of course peanuts sauce.
PB cravings triggered with this picture. Don’t know what I would do if I were allergic!
Going to check out the post now…
sounds delicious! i love peanut noodles!
peanut noodle salad… hadnt tried this combination before. I guesse I should, looks great Joanne!
Ooo I’m with you. Peanut butter all the way baby. I have some fresh bok choy and edamame in the freezer!
This looks so good. I need to get cracking making all these things – you inspire me!
(BTW – I wrote down the ingredients for the Lentil Shepherd’s Pie and my regular grocery didn’t have Swiss Chard, so I need to make a trip to the international farmers’ market near my house in Atlanta to get it. I could have used kale, I guess, but I really wanted to make it the way just the way you did.)
are you sure it’s peanut butter and not squash? just wondering… 🙂
This looks wonderful. I love the combination of coconut milk and PB. It’s very sad… my husband gets migraines from peanuts so I can’t use them much. Do you think I could sub almond butter?
You could definitely use almond butter!
Yummy. Bok Choi is heading my way and will be delivered friday. Until then I will drool over this picture haha.
Wow, does this look delicious! Off to see the recipe.
Mmm, I’m a peanut butter-loving girl too and this looks amazing! Off to check out the recipe!
Ob-sessed with edamame! I love this! Perfect for a dvd night 🙂
I AM WITH YOU on Peanut Butter! I can eat it everyday! You have Bok Choy and edamame here and I have asparagus and edamame over at my side :p A happy coincidence.
woman! anything peanut noodle and I am there. so there.
try that whole foods brand organic chunky peanut butter. sooooo good!
A great light meal for the spring season!
I love peanut butter. That looks soooooo good, Joanne! I’m headed over right now to snag this recipe. Yum!
This looks so yummy! I just bookmarked the recipe on Marcus Samuelsson’s blog!
Wow that looks so good, and I love peanut butter too!!
Peanut butter is truly a magical ingredient… It’s so weird to visit other countries and realize that it doesn’t really translate. Who knew that it was such an American thing, and moreover, how do so many people manage to live without it??
Peanut noodles are my downfall. Those silky strands coated in rich sauce are just impossible to say “no” to. 😉
That looks so delicious. It’s amazing how peanut butter, invented just to spread on toast, has so many wonderful uses. It has to be the most diverse spread. Great recipe. I’ll have to try this. xx
Peanut body truly adds body to anything you put it in… bread, oatmeal, dipping sauces, and noodle dishes. Amazing! This looks beyond delicious!
I’ll check out that recipe…and I totally, totally know how you feel. Not so much that I could eat it solely for the rest of my days, but in that I find it so hard not to make noodles and then make a satay sauce to go on top. Noodles and peanut butter go together indelibly in my mind.
Peanut butter, peanuts – you had me at “pea….” Evernoted to try soon – says summer to me and looks DELISH!!
I LOVE peanut butter.
yesterday I was craving peanut butter and I nearly added it to my baked potato!
I would eat peanut butter and chocolate together, but peanut butter by itself is pretty high up on the list. I haven’t tried it in many savory recipes yet, but this one seems like a great recipes to start with.
I adore peanut noodles – checking it out!!
The universe is definitely telling me it’s time for peanut noodles in my life. These sound delicious!
Peanut butter = love, and so does this dish.
wowee that looks awesome!
I’m a fan of the peanut butter – i didn’t used to be, not sure why, but as i’ve “grown up” it is starting to be one of my favs.
Me too! Especially with noodle salad. So irresistible.
Oh yes, I could definitely eat a bowl of this, love peanut and noodle dishes.
Have bookmarked this and plan to add it to my weekly menu. This looks too good not to have.
I love peanut and edamame noodles! So delicious.
Oh, I agree wholeheartedly. I never knew how much I depended on it until we couldn’t get it when living in Brazil. There was a corner of my suitcase devoted specifically to smuggling it in each time we visited home. Headed over to get this recipe!
