Great healthy meal, as always. You know I always think that I hate eggplant but if it’s in front of me, I’ll eat it, thinking that it’s tofu. And I’ll like it. But I’m still so stubborn to believe that I hate eggplant.
That’ll all going to change once I make this though 🙂

I’m an eggplant nut… I really don’t understand folks who can’t get behind it. And Asian eggplant, especially when prepared like this, is heaven.
Definitely going to check this one out. It will be perfect when the eggplant starts in our garden this summer. I never know quite what to do with it all! (Which I realize is a good problem to have.)

Eggplants are my absolute favourite veges!! And I love stir fry eggplants especially when they’re slightly overcooked so I get that soft, chewy texture.. mmmmmm……… Totally drooling over this now!!!

Anything with eggplant gets my attention. And usually it doesn’t photograph well…but you sure did a great job with it in this dish, Joanne. Keeping the skin on and cooking it fast sure helps the final results. This looks wonderful!
