If you’re looking for a quick, easy and healthy dinner then this Asian Eggplant Stir Fry is for you!  Check out my post and the recipe over at Marcus Samuelsson’s blog.

This recipe is from the cookbook Meatless Meals for Meat Eaters, the author of which is actually another blogger, Miriam!  Although the rest of her family eats meat, Miriam’s goal is to provide them with healthy vegetarian meals that are so tasty they won’t even realize they’re meatless!  Her cookbook is full of delicious comfort foods turned veg that will definitely satisfy just about any palate.  Highly recommended!

  12. Great healthy meal, as always. You know I always think that I hate eggplant but if it’s in front of me, I’ll eat it, thinking that it’s tofu. And I’ll like it. But I’m still so stubborn to believe that I hate eggplant.

    That’ll all going to change once I make this though 🙂

  32. Eggplants are my absolute favourite veges!! And I love stir fry eggplants especially when they’re slightly overcooked so I get that soft, chewy texture.. mmmmmm……… Totally drooling over this now!!!

    Anything with eggplant gets my attention. And usually it doesn’t photograph well…but you sure did a great job with it in this dish, Joanne. Keeping the skin on and cooking it fast sure helps the final results. This looks wonderful!
