Hey friends, Happy Saturday!!!!
We were geared up for an awesome weekend filled with Remy’s first ballet recital, lots of Christmas activities, and *maybe* even a visit to Santa but then the kid was up coughing ALL. NIGHT. LONG.
So I was also up. ALL. NIGHT. LONG.
Did you know that there are basically no quick fixes for kid coughs when they’re under 6 years old?? We did lots of spoonfuls of honey. steam-breathing in the bathroom, and finally Vicks VapoRub is what did the trick and got her to sleep. On me, of course, so guess who’ll be hacking up a lung in a few days????
She’s looking a lot better today in terms of cough frequency, so we’ll see what we actually end up doing.
Hope you’re all having a healthier time of it!! Here’s what we have for you on this week’s meal plan:
- EASY minestrone soup – so hearty and fabulous
- roasted potato, mushroom, and lentil kale salad – this is definitely a main meal kind of salad!
- creamy vegan mushroom soup – stick to your ribs good
- Indian vegetarian paneer and bean chili – a totally new and spiced up take on chili
- crispy tofu steaks – whoa, need this
Happy eating!
