It’s Thanksgiving week!!! Arguably the best week of the year.

Last year I wasn’t off so I didn’t bake or cook A SINGLE THING. So this year I’m making up for it by planning to bake ALL THE THINGS. Apple pie, pumpkin pie, cornbread stuffing, and some sort of vegetarian main course for Remy and I to eat. Maybe we’ll share….maybe not.

We’ve got a lot of light and healthy meals planned for this week in anticipation of all the food we know you’ll be eating on Thursday:

  • butternut squash pear soup
  • EASY vegan meatloaf
  • butternut squash and chickpea chili
  • rosemary roasted potato, mushroom, and lentil salad

Hey guys! I’m alive. Just took a mini break from blogging. I don’t know what it was – the mental/physical exhaustion from working in the ED, still feeling a bit jet lagged from switching from nights to days, a little bit of a brewing cold, having a two year old – but I just couldn’t with anything last week.

The good news is that I had a day off yesterday and I am feeling revitalized and re-inspired to cook, to eat, to dream about what I’m making for Thanksgiving. You know, the important things.
