    Yum, looks delicious! I’ve been using cauliflower in place of half the noodles in my mac and cheese all winter, I’m going to have to try this variation.

    Even though I will never be swimsuit ready. That, for me, is a hopeless thing.

    Swimsuit season is not something that falls on my calendar! Even so, this sounds like a really creative and tasty twist on the classic mac. Sweet potatoes and spice always seem to go so well together in just about any dish.

    What an interesting combination of flavors! I love that you were able to incorporate the soy meat into the dish to get a little more protein in. That’s one of my biggest problems when I make a pasta dish.

    this was absolutely decadent. next time I am doubling the recipe!

    cooked the SPs in the microwave and skipped the chipotle so it wouldn’t be too spicy for the baby.
