My friend Erin from The Spiffy Cookie is currently in the midst of doing something that I aspire to someday, which is writing and defending her thesis! Such a rockstar. Those sure are pretty in pink! Texture is more than half the battle in lemon bars, and these look so perfectly soft and chewy- I just want to sink my teeth into them.
