Healthy Vegetarian Meal Plan – 9.2.17
I think I’m becoming crotchety. It probably has something to do with having to work > 12 hour days.
Or basically living at the hospital.
Or consistently getting less than 6 hours of sleep a night.
But last night I was literally driven insane by our Instacart shopper. I think I gave him the most negative review I’ve ever given anyone. I maintain that he deserved it, but I’m probably a little bit more passionate about the integrity of my groceries than the rest of the population is. In my defense, he charged me for potatoes that I never asked for and refunded the butter I ordered without even trying to replace it, as if there was NO butter in all of Whole Foods. I mean, I just find that very hard to believe.
And did I mention that I’m subsisting on less than 6 hours of sleep a night?! I. NEED. BUTTER.
Sigh. Maybe I expect too much?!?!
Anyway. Now that I’ve worked myself up into a state over this, let’s talk meal plans! This one has a good mix of fall foods and end of summer favorites. There are vegan crab cakes, homemade veggie dogs, a grilled veggie salad, a sheet pan Mexican veggie dinner, and my favorite summery quesadillas. Happy eating!

Instead I have a child who eats peanut butter crackers for breakfast, French toast sticks for lunch, broccoli “flowers” for dinner and throws all of her burrito on the floor.

Best Ever Overnight Pecan Caramel Sticky Buns
Pecan caramel sticky buns are allowed to rise overnight in the fridge so that they are ready to bake off for an indulgent and delicious breakfast the next morning.

Look, you can’t expect a girl to refrain from sticky bunning once a craving hits, summer and 90 degree weather notwithstanding.
That would be sheer madness.

Feeling MAJORLY weird/in denial that it’s the last week of August.
Anyone else?
Like, I’ve only eaten THREE peaches all summer. How is this possible?!
As further proof that time is fuh-lying, Remy has been running around saying all the words. I swear it’s a new word a day! When we started out the summer I was worried because she was barely saying anything and now she is definitely making up for lost time. Most of the words are somewhat abbreviated versions of the actual words (so cheese is “chee”) but for most things you can really tell what she’s saying. It’s so fun!
But also, I need to figure out how to stop time. Like, yesterday.
I have off again this whole weekend so we are going to spend some time getting together with friends we haven’t seen in months and hopefully eat lots of good food. I’ve got a double chocolate layer cake and nutella-stuffed french toast on the menu, so you know it will be good.
