If you get raging alfredo sauce cravings like I do, but don’t really feel like expending all of those calories on eating it…then head on over to Marcus Samuelsson’s blog to check out my recipe for this roasted red pepper goat cheese alfredo pasta!  It is surprisingly light while tasting amazingly delicious.

I am submitting this to Presto Pasta Nights which is being hosted by Ruth of Once Upon a Feast! It is going to be the last Presto Pasta Nights EVER, which is very sad to me since it was one of the first blog events that I participated in.  I would never have encountered a large number of the blogs I read today without it!!  So thank you Ruth for all that you’ve done over these years in organizing and hosting it. Here’s a non-ideal life situation for you – Thanksgiving menu testing the week before running a marathon. Really.

I mean, it’s only the biggest food holiday of the year.  And maybe it’s also the first time you’re cooking/baking for your extended family who have never really eaten anything you’ve cooked and/or baked, but know about the blog and are therefore probably expecting greatness.  No pressure.

So now not only are you stress eating like a madwoman, but you also have three gratins, a few pies, and a sweet potato casserole or two on the menu for this week, none of which are particularly skimpy on the heavy cream.  Not to mention the fact that you also feel compelled to make a real dinner that has, you know…a less jaw-droppingly awful saturated fat and cholesterol profile and that might actually make your muscles stronger rather than send them to hell in a handbasket along with your size 4 skinny jeans that you really want to still fit into after all this is over.

Oh the joys of being a food blogger.

Since I’ve just about given up all hope of ever PR-ing in a marathon ever again (can one beat running 26.2 miles in 3 hours and 35 minutes on their first try?  Especially when one’s legs are no longer fresh, supple, and/or toothpicks with muscles, but are instead post-two-stress-fracture-and-countless-muscle-injury-ravaged-legs? I think not.)

I’ve decided to take up PR-ing at dessert.  Thanksgiving dessert to be precise.

No, this recipe absolutely did not come about after I accidentally dropped cookie batter ingredients into a bubbling pot of stick-to-your-ribs, spice-infused, vegetable-rich chili.

Never mind that I was definitely not supposed to be eating cookies at all whatsoever when I made this since it was the week before the marathon-that-wasn’t and I had every intention of keeping it clean and healthy until the Big Day.

Social media has been telling me that I’m selfish for over a week now.

And the truth is that yes. Even in the wake of Hurricane Sandy, I wanted to run the NYC Marathon.  Yes, I was happy when, the Tuesday before, Mayor Bloomberg announced that it was still on.

And yes, I was devastated when, late Friday afternoon.  Approximately 36 hours before the race, as I headed into the expo to pick up my bib.  He announced that it was canceled.

Oh, the tears that flowed.
