Eclairs with caramelized white chocolate pastry cream filling are the perfect weekend baking project – AND indulgence!

It’s been a French pastry kind of week.

A dig your hands deep into the bowl of butter, flour, and sugar and don’t come up until you have something beautiful to show for it seven days.

Because even when everything else seems askew, and we’ve eaten more than the daily recommended dose of Hall’s cough drops (times four), at least we still have our eclairs (along with an ever-growing pile of cough drop wrappers). And that totally counts for something.

I like to spy on the people I love.

One could call it being observant. Detail-oriented. Overprotective.

But let’s call a spade a spade: it’s spying.

Dinner gets a spring makeover in this pea, asparagus, and spring herb pasta that is filled with bright, fresh flavors and ingredients.

I don’t even want you to know what’s on my windowsills.

Let’s pretend it’s this pasta which is (literally) bursting with green and would make Kermit proud.

(And not two loaves of Greek Easter bread, twelve pieces of the.boy’s grandma’s sugar-soaked semolina cake, two solid milk chocolate bunnies that are BIGGER THAN MY FACE, six Hershey’s kisses, four mini Mr. Goodbars, not enough Reese’s eggs, and a partridge in a hard-boiled egg tree.)

Wintsprummer, sprintummer….whatever you decide to call this spring/summer/winter mix of weather we’ve been getting, one thing that is for certain is that this medley of unpredictable temperatures is throwing my taste buds askew.

They want stews one day, salads the next, cake for breakfast, and pumpkin every second of every minute of every moment of every everything.

On the list of things I highly recommend never ever doing in life, watching someone die is one of them.

No one should ever have to watch their child, best friend, father, mother, or sibling lay in a hospital bed and fight for their lives.

No one should ever be told “there is nothing more we can do”.

The day I was told that my father had cancer was the worst day of my life. And, two weeks later, he was gone. Just like that.

I could cry every day for every moment that we should have had together, but don’t. For every day that would be made better just by him being alive. For every second that I want to call him or hug him or see him laying on our couch in the living room, but can’t.  He was the best person that I have ever known. The most selfless, caring, genuine person. Not having him around is the worst feeling in the world, and I wouldn’t wish it on anyone.

But crying won’t change anything, and it most certainly won’t help us find a cure so that no one else has to feel this pain.

So instead, I run. I am currently training for the Nike Women’s Half Marathon with Team in Training and fundraising for the Leukemia and Lymphoma Society. The money that I raise will go to funding cancer research and help support patient care.

To that end, I am hosting a Virtual Bake Sale with all the proceeds going towards the Leukemia and Lymphoma Society. Thank you so much to all of my blogging friends who have donated baked goods for this great cause and thank you advance to all of you who will bid and participate. It means the world that you would do this for me and for all the cancer patients out there who are fighting for their lives, every day, waiting for that cure.

So please, head over here to check out what’s up for auction.

If you want to donate separately from this, you can check out my fundraising page.

Coconut Cake with Silk Meringue Buttercream is light, fluffy and perfect for a spring dessert! Not overly sweet like many of its counterparts, each bite of this version tastes like paradise.

Unsurprisingly, the girl who cannot make “30 minute meals” in thirty minutes is also inept at 7 minute frosting.

You know, the foolproof, “frosting-for-dummies” frosting that everyone and their three year old cousin can make?

Yeah. That one.

I’m just not that into it.

Or it’s just not that into me. (Probably the latter. But don’t tell my baking ego.)
