Wow I feel like this has been a rough week. It was my birthday week, which was fun, but the news has had my emotions up, down, and sideways with all of the coronavirus updates. I’m not particularly afraid of the virus itself, more of what it’s going to do to our society and our everyday lives. My patients keep asking me if I’m stocked up on toilet paper (spoiler alert: we’re not) so…that’s not helping. Should I be?

At least I feel fairly confident that if we have to be quarantined, I’ll be able to cook my way through it. I did stock up on lots of pasta and we have SO MANY dried beans in our pantry that I feel like we’ll be okay. What are you all thinking about this and what are you doing to prepare??

On a much lighter note…let’s talk this week’s meal plan! Here’s what is on the menu:

  • the BEST vegan orange chicken…made with cauliflower! I’m intrigued.
  • vegan creamy broccoli soup – could totally use a bowl of this
  • vegan thai red coconut curry – one of my favorite comfort foods
  • sweet potato quinoa stew – how hearty does that look?
  • classic lentil burgers – WOW

Thursday

Classic Lentil Burgers from Making Thyme For Health

Prep Ahead Tip: Lentils can be cooked in advance. Burgers can also be prepped in advance and stored in the fridge or frozen.

Vegan/Gluten-free Substitutions:Use gluten-free breadcrumbs and flour to make GF. Sub flax eggs to make vegan.
