Potty training, you guys. It is not for the weak-minded. Or the non-caffeinated.

We’re doing the have-your-toddler-run-around-the-house-naked-and-ask-her-every-five-minutes-if-she-has-to-pee method-while-occasionally-bribing-her-with-baked-goods. I think it’s working?? She’s still almost never asking to go to the potty but yesterday was our first accident-free day! Basically a combination of her getting better at holding it and me developing a stronger sense of the dance she does when she has to pee lol. Will she be ready to go back to school in underwear on Wednesday? NO IDEA. But I’ll be damned if I let her daycare teachers ruin all the mentally energy I’ve put into this on my “vacation”.

Enough potty talk. Here’s what we’ve got on the meal plan this week!

  • ONE POT African peanut stew (so healthy. totally making this.)
  • crispy potato tacos (like, maybe my kid would actually eat these?!)
  • veggie enchiladas with black beans, corn, and spinach (a fave around here!!)
  • vegan butternut squash (SO HEALTHFULLY CREAMY)
  • rustic minestrone soup with rice and kale (SO want to hug a bowl of this)

Prep Ahead Tip: The entire casserole can be made in advance and reheated the day of eating.

Vegan/Gluten-free Substitutions: This recipe is already gluten free. Use vegan cheddar or pepperjack cheese (or omit the cheese entirely) to make this vegan.
