Happy Saturday friends!!!
I am SO happy to have two days off after last week’s working weekend. Today we are celebrating by going for a run! It is a Summer Streets weekend here in the city and so Park Avenue is closed off to traffic so that runners and bikers and walkers can use it for their exercise. It’s AMAZING. We’ve been doing the same weekend running route for a few months now and so it will be a welcome change. Then we’re going to my in-laws’ to spend some time at their pool! Sunday is wide open still, and I’ve basically only got plans to make a pie. What else is new, haha???
Here’s what we’ve got on this week’s meal plan!
- one pot tomato basil quinoa – so summery!
- pasta salad with lemon poppy seed dressing – never seen a dressing like this on pasta before
- chickpea and lentil taco bowls – meal prep perfect
- roasted eggplant and hummus tartines – shockingly easy and so yummy
- sweet potato and black bean enchiladas – LOVE these flavors
