The overlap of summer and autumn – it is really my FAVORITE time of year for food. I just bought ten ears of the sweetest corn alongside 4 winter squash at the market and I am definitely not mad about it. The weather has also cooled off enough that I don’t cringe at the thought of spending hours in the playground with Remy. We try to go a few days after daycare if I get home early enough and then of course on the weekends. I know that soon it will be way too cold for us to go, so I’m trying to take advantage of as many good weather days as possible.

Alright, we have to rush to get ready for tee-ball, so let’s get talking about the food! Here’s what we’ve got on this week’s meal plan:

  • the BEST vegan chili – would love a big bowl of this with some cornbread on the side
  • vegan stuffed shells with tofu ricotta – so great to have a pan of this in the fridge ready to go
  • loaded vegetarian sloppy joe baked sweet potatoes – football food for vegetarians!
  • spaghetti squash stir fry – reminder that I really don’t use spaghetti squash enough
  • vegan taco bowls – big heart eyes for these
