Officially craving all things fresh and berries and asparagus and SPRING!
Here’s what we’re eating this week:
- Starting off the week with whole wheat pasta tossed with summer squash, cherry tomatoes, basil, and pine nuts. Tastes like a breath of fresh air.
- Next up – spring asparagus and potato chowder. This just makes me feel good.
- On Tuesday we’re making my favorite roasted cauliflower, Israeli couscous, and halloumi bowls.
- One pot vegan Caribbean pelau is the easiest midweek dinner for Wednesday.
- Finally, we’re closing out the week with Tuscan baked white beans and artichokes, another one pot wonder.
- For dessert we’re making brown butter hazelnut cake with fresh berries and whipped cream. Love this one!

Vegan Substitutions: Use coconut milk in place of the heavy cream.
TUESDAY
ROASTED CAULIFLOWER AND ISRAELI COUSCOUS BOWLS WITH HARISSA HALLOUMI
Prep Ahead Tip: Roast the vegetables and cook the couscous ahead of time.
Vegan Substitutions: Use tofu in place of the halloumi and vegan yogurt in place of the labneh.
WEDNESDAY
Prep Ahead Tip: Recipe comes together quickly, no need to prep ahead.
Vegan Substitutions: Recipe is already vegan.
THURSDAY
TUSCAN BAKED WHITE BEANS AND ARTICHOKES
Prep Ahead Tip: Make the basil oil ahead of time.
Vegan Substitutions: Use tofu ricotta in place of the ricotta.

I was in a cooking rut, so I tried 3 of these this week – pasta, soup, and pelau. All were so delicious, even the picky kid ate them! Thanks, I will definitely add these to our regular lineup!
