I know a lot of bloggers out there have promised to stay light and chipper even in the wake of all the turmoil that is going on in the world, but to be perfectly honest I’m not sure I can be that blogger.

Last week I was home on a pre-planned staycation (not sick! I swear! that I know of!) and so I got to sit idly by and watch as the world exploded. It wracked my nerves in ways I didn’t know were possible. I was paralyzed with fear, scouring the internet for news source after news source, compelled to read anything and everything I could about the virus.

Today I have to shake it off, as T. Swift and my toddler would sing (the things they learn at daycare), and go back to work.

Healthy Vegetarian Meal Plan - 3-14-20

It’s meal plan time! And this week, coincidentally, we happen to have a lot of meals that rely on pantry staples, so make a list, stock up, and get cooking!

Here’s what we’re making this week:

  • easy red lentil curry – the ultimate pantry meal
  • sheet pan Mexican veggie dinner – make a big batch and eat for daaayyysss
  • 30 minute chickpea and vegetable stir fry – can be made with all frozen veggies if needed
  • pesto quinoa salad with asparagus, avocado, and kale – so gorgeously green!
  • roasted broccoli chickpea lemon pasta – my kind of comfort food

I send Remy to school each day wondering if it’s the right thing to do, but also worried at the same time that at some point in the not so far off future we probably will be stuck at home and so maybe we should just make the most of this semblance of normalcy while we can?

There are no right answers here, is what I’m learning. Just a whole lot of question marks.

Last week I was having a major royal freak-out over the fact that all of my go-to grocery delivery services were out of pantry staples (bread, pasta, CHOCOLATE!!!!).

Until I came to this stark realization: I CAN MAKE THEM MYSELF.

(Well, not the chocolate but two out of three ain’t bad.)

So that’s my plan should things really get bad around here – run a make-shift bakery out of my home. I know you’re all relieved that I’m putting my medical degree to good use.

Happy Saturday!

This week was packed with SO MUCH Corona Craziness. All of the hospitals in NYC banned any work-related travel for the next 60 days at least and also put some restrictions on personal travel as well. Basically, you can go but at the peril of potentially having to self quarantine for 14 days without pay after you return. They’ve also canceled any meeting or conference with more than 25 people in attendance, and any outside speakers (even if they’re coming from another institution in NYC) cannot come. Meanwhile, the majority of our staff is taking public transportation to work every day, so……not sure any of this makes much sense.

Even getting groceries was an ordeal this week. Normally I order from Whole Foods via Amazon Prime Now but when I checked they had no delivery slots available!! So instead I had to order from Fresh Direct, which was probably $100 more expensive. Womp womp. First world problem, for sure.

Hope you are all staying safe and healthy! Here’s what we’re cooking up on this week’s meal plan:

  • mediterranean pasta salad – all my favorite things!
  • quinoa veggie stir fry with peanut sauce – yum
  • fiery vegetarian mapo tofu – so spicy, but SO GOOD
  • 30 minute vegetarian curry – easy peasy meal
  • healing moroccan lentil soup – yup, need this
