A fresh and herby quinoa and wild rice salad with roasted sweet potatoes, feta, and sumac.
Quinoa and Wild Rice Salad with Sweet Potatoes, Feta, and Sumac

Pinky swear that this is not your average quinoa salad!!

I mean, it’s based on an Ottolenghi masterpiece so you know it has to be good and filled with flavors you never thought it was possible to combine. He’s coming out with a new cookbook in the fall and I’m already hinting to Mike that I will be needing it as a pre-Christmas present. Yes, I’m as bad as Remy with the Christmas requests in March.

NO SHAME IN MY GAME.

Back when I first met Mike he would fast for lent, which in Greek Orthodox tradition involves exactly no fasting at all (god save the person who tries to come between a Greek and their food), just abstaining from meat and dairy on the Fridays during lent and then the entirety of holy week.

This all stopped after we started living together because he felt so altruistic from eating vegetarian at home 365 days of the year, that he didn’t think he needed to do any additional penance.

Wow I feel like this has been a rough week. It was my birthday week, which was fun, but the news has had my emotions up, down, and sideways with all of the coronavirus updates. I’m not particularly afraid of the virus itself, more of what it’s going to do to our society and our everyday lives. My patients keep asking me if I’m stocked up on toilet paper (spoiler alert: we’re not) so…that’s not helping. Should I be?

At least I feel fairly confident that if we have to be quarantined, I’ll be able to cook my way through it. I did stock up on lots of pasta and we have SO MANY dried beans in our pantry that I feel like we’ll be okay. What are you all thinking about this and what are you doing to prepare??

On a much lighter note…let’s talk this week’s meal plan! Here’s what is on the menu:

  • the BEST vegan orange chicken…made with cauliflower! I’m intrigued.
  • vegan creamy broccoli soup – could totally use a bowl of this
  • vegan thai red coconut curry – one of my favorite comfort foods
  • sweet potato quinoa stew – how hearty does that look?
  • classic lentil burgers – WOW

Happy eating!
