A play on the favorite Girl Scout samoa cookie, these caramel coconut cluster bars have a shortbread base that is topped with a coconut-filled caramel, MORE coconut, and a chocolate drizzle.

Making babies.
I mean, CELEBRATING people who are making babies.
A little Freudian slip there. #oops.
ESPECIALLY when those people are as fun, sweet, loving, wonderful, adorable as my friend ZAINAB from BLAHNIK BAKER!! She is expecting her first baby (a boy!!) at the end of this month and all of her blogger friends and I couldn’t be more excited for her!! So obviously we had to throw her a (virtual) baby shower where the theme was her favorite fruit – the COCONUT.
Zainab and I have a LOT in common…aside from being food lovers with a penchant for all things sweet, we are both biology PhD students, so we connect on a whole lot of levels and frequently gripe about #PhDProblems on Twitter. We met in person for the first time last year and have hung out a few times since then, and every time I swear I feel like we’ve known each other forever. I know she is going to be the BEST mom.
I wish we could all get together in person to celebrate, but instead I guess you’re all just going to HAVE to make these caramel coconut cluster bars at home and use your imagination. They are basically a knock-off of what used to be the samoa Girl Scout cookie (I think now it’s called a Caramel De-light??), but BETTER because they’re in bar form. Basically that means you get a thick layer of shortbread cookie, an even thicker layer of coconutty caramel, and MORE coconut and chocolate on top. What a way to celebrate.

White Chocolate Coconut Key Lime Cookies, by Culinary Couture
- 3 cups shredded sweetened coconut, divided
- 2 cups all purpose flour
- ½ tsp salt
- 8 oz unsalted butter, softened
- ½ cup sugar
- ½ tsp vanilla
- 1 cup light corn syrup
- ½ cup sugar
- ½ cup light brown sugar
- 1 cup heavy cream
- ⅓ cup sweetened condensed milk
- 2 oz unsalted butter, room temperature
- 1 tsp vanilla extract
- 6 oz dark chocolate, coarsely chopped
- To make the toasted coconut, heat oven to 300F. Line a baking sheet with parchment paper.
- Spread the coconut in an even layer on the baking sheet and toast in the oven, tossing every 4 minutes, until just golden, about 12-16 minutes total. Remove from the oven and set aside to cool.
- To make the cookie base, increase oven to 350F.
- Line a 9x13-inch pan with parchment paper and grease.
- In a medium bowl, whisk together the flour and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until fluffy, about 3-4 minutes on medium-high speed. Add the vanilla and flour and mix until just combined.
- Turn the dough into the prepared pan and press into an even layer. It helps if you lightly flour your hands first. Prick with a fork and bake for 25-30 minutes or until lightly golden. Let cool.
- To make the caramel, in a medium saucepan combine the corn syrup, sugars, and 2 tbsp water. Set over low heat and stir gently until sugar dissolves. Increase the heat to medium-high and cook, without stirring, until it reaches 245F.
- Remove from the heat and stir in the butter and cream mixture until combined. Place back over medium heat, stop stirring, and bring back to 245F.
- Remove from the heat and stir in the vanilla along with 2 cups of the coconut. Pour onto the cookie base and spread in an even layer. Sprinkle the remaining coconut over the top. Let cool to room temperature and then refrigerate for 1 hour.
- Cut into bars.
- Melt the chocolate in the microwave in 30-second intervals, stirring after each. Drizzle over the bars. Refrigerate for 15 minutes to allow chocolate to set.

Well the process of making the babies is fun too. It’s why we spent years “practicing” before we actually tried to get pregnant.
