I’m in the final countdown of night shifts (only three more to go!!!!) and it feels so good. I’m THRILLED to be done with nights forever after this. Tuesday can’t come soon enough.

Prep Ahead Tip: The broccoli can be roasted ahead of time and then stored in the fridge a few days in advance.
