New year, new meal plans!! If you’ve made a resolution to eat better, eat more vegetables, veganuary, WHATEVER then this is the place to be. Each week we will feature 5 recipes, each with tips for prepping them ahead of time and vegan/gluten-free substitutions if they’re not already, as well as a printable shopping list that is divided by recipe to make your life a little bit easier.

Here’s what we’re serving up this week!

  • kale caesar salad pitas – all the creaminess but VEGAN
  • mediterranean vegetable pasta – so fresh!
  • persimmon and pomegranate salad – filled with seasonal flavors
  • crockpot vegan pumpkin chili – total comfort food
  • one pot golden lentil curry – never has yellow food looked so good

Prep Ahead Tip: Recipe comes together in just about 20 minutes so no need to prep ahead

Vegan/Gluten-free Substitutions: Use Vegan Caesar dressing to make vegan. Use gluten free pitas and gluten free croutons to make gluten free.

 

Monday

Mediterranean Vegetable Pasta from Hummusapien

Prep Ahead Tip: Recipe is ready in less than 20 minutes, so no need to prep ahead

Vegan/Gluten-free Substitutions: Omit feta for vegan, sub gluten-free pasta for gluten-free

 

Tuesday

Persimmon and Pomegranate Salad from Eats Will With Others

Prep Ahead Tip: Recipe comes together quickly, no need to prep ahead.

Vegan/Gluten-free Substitutions: Recipe is already vegan and gluten-free.

 

Wednesday

Crockpot Vegan Pumpkin Chili from The Roasted Root

Prep Ahead Tip: The whole recipe is designed to be made ahead of time. Store it in a sealed container for up to 5 days in the refrigerator.

Vegan/Gluten-free Substitutions: Recipe is already vegan and gluten-free.

 

Thursday

One Pot Golden Lentil Curry from Making Thyme For Health

Prep Ahead Tip: Onion, peppers, garlic and ginger can be chopped in advance. Chard can also be washed and cjopped in advance.

Vegan/Gluten-free Substitutions: Recipe is already vegan and gluten-free.
