What To Cook This Week - 10-16-21

I may say this every week, but this week’s meal plan is FULL of my favorites!! I love every one of these recipes to the max and hope you try, well, all of them. They’re fall perfect and so good.

Here’s what we’re cooking:

  • Starting off the week with my favorite quiche, made with butternut squash, brie and chard. These flavors are just too perfect together. I dream about this.
  • Next up – an easy weeknight kidney bean curry (aka rajma) that fills your belly with spice and wholesome comfort.
  • On Tuesday we’re making pumpkin tortellini with pumpkin alfredo sauce. I’m obsess with this and make it a few times every fall!
  • Creamy tomato soup with caramelized onions is on tap for Wednesday and it is the ULTIMATE. Seriously the best tomato soup I’ve ever eaten.
  • Finally, we’re ending the week with a chickpea nicoise salad that is veggie-full and still very tasty.
  • For dessert, we’re making an old-fashioned apple cake with brown sugar frosting!

SUNDAY

BUTTERNUT SQUASH, BRIE, AND CHARD QUICHE

Prep Ahead Tip: Use a pre-made pie crust or prep your pie crust ahead of time. Roast the butternut squash ahead of time.

Vegan Substitutions: This will be very difficult to veganize given it’s reliance on eggs and cheese.

EASY WEEKNIGHT KIDNEY BEAN CURRY

Prep Ahead Tip: If making kidney beans from dried, then soak and cook them ahead of time. If using canned beans, recipe comes together quickly,

Vegan Substitutions: Recipe is already vegan.

TUESDAY

PUMPKIN TORTELLINI WITH PUMPKIN ALFREDO SAUCE

Prep Ahead Tip: Recipe comes together quickly, no need to prep ahead.

Vegan Substitutions: Use a vegan tortellini and vegan cashew cream in place of the heavy cream. Use a dairy free parmesan cheese.

WEDNESDAY

CREAMY TOMATO SOUP WITH CARAMELIZED ONIONS

Prep Ahead Tip: Cook the caramelized onions ahead of time.

Vegan Substitutions: Omit the heavy cream and use olive oil in place of butter.

  1. Ok, so I’m coming to your place this week! I won’t miss the meat at all. It’s the tomato soup for me. I’ve been craving it and then I saw your version and it did me in. Caramelized onions and pasta – yes please!
