Healthy Vegetarian Meal Plans- including prep ahead tips + vegan and gluten-free substitutes!

We have a potty expert! (<– Remy’s words. Not mine. I suspect she’s biased.)

In all seriousness though, she’s only been having one accident per day. The first day it was totally to be expected. The second day it was because they forgot to put a pull-up on her for naptime and she still can’t really hold her pee while she sleeps. The third day was a bit of an overexcited-I’m-too-busy-to-pee situation. And now here we are. THE WEEKEND! I can’t wait.

Okay, so here’s what we’ve got on this week’s meal plan:

  • cauliflower hemp (vegan!!) alfredo (sign me up!)
  • vegetarian paneer and bean chili (so scrumptious)
  • winter quinoa salad with butternut squash (everything I’m craving)
  • tempeh and kale enchilada casserole (yaaasssssss)
  • vegan broccoli and cheddar soup (pass me a bowl)

Happy eating!

A charming winter salad that pairs in-season persimmon and pomegranate with arugula and toasted hazelnuts.
Persimmon and Pomegranate Salad with Arugula and Hazelnuts

A salad! In January!

I know, you’re shocked. I mean, it’s not like the entire internet/world/galaxy is on a low carb, whole 30, paleo, intermittent fasting diet thingy right now or anything. (<– sarcasm.)

But here’s the real kicker: I actually ate this salad in December. INSTEAD OF COOKIES.

I’m not even sure who I am anymore.

A hearty (and lucky!) Indian stew made with black-eyed peas, greens, and red lentils. It is full of healthy plant protein and fiber, yet tastes like comfort food.
Lucky Black-Eyed Peas, Greens, and Red Lentil Curry

Full disclaimer: I have no idea if this is lucky at all.

If we’re being totally honest, my kid peed all over her floor mere hours after eating it (her first accident in THREE GLORIOUS DAYS!!!), which was approximately twenty minutes after my husband had finished doing the laundry.

I’m hoping it’s kind of like rain on your wedding day where it’s unlucky in that moment, but portends a helluva lot of luck for the future. Yes, let’s go with that.

Potty training, you guys. It is not for the weak-minded. Or the non-caffeinated.

We’re doing the have-your-toddler-run-around-the-house-naked-and-ask-her-every-five-minutes-if-she-has-to-pee method-while-occasionally-bribing-her-with-baked-goods. I think it’s working?? She’s still almost never asking to go to the potty but yesterday was our first accident-free day! Basically a combination of her getting better at holding it and me developing a stronger sense of the dance she does when she has to pee lol. Will she be ready to go back to school in underwear on Wednesday? NO IDEA. But I’ll be damned if I let her daycare teachers ruin all the mentally energy I’ve put into this on my “vacation”.

Enough potty talk. Here’s what we’ve got on the meal plan this week!

  • ONE POT African peanut stew (so healthy. totally making this.)
  • crispy potato tacos (like, maybe my kid would actually eat these?!)
  • veggie enchiladas with black beans, corn, and spinach (a fave around here!!)
  • vegan butternut squash (SO HEALTHFULLY CREAMY)
  • rustic minestrone soup with rice and kale (SO want to hug a bowl of this)

Happy eating!!

The top 10 recipes of 2018 – filled with healthy favorites, comfort foods, and decadent desserts from the past year.
The Top 10 Recipes of 2018 From Eats Well With Others

How do you measure a year in the life?

In 89 recipes.

Uncountable toddler tantrums.

An unknowable amount of butter, flour, and sugar.

And a whole lot of love.

The turn of this year marks a decade of blogging for me. It feels like yesterday, but also a little bit like forever. I was a college senior then, just learning how to cook and taking photos with a point and shoot on the sole (green) plastic plate that I owned. Oh, how times have changed. For the better, of course. The food world continues to evolve and turn into something that I am really excited to be even a small part of. If you had asked me ten years ago what half the ingredients are that I cook with now (za’atar, harissa, tahini – I’m looking at you), I would have asked if you were speaking a different language. These are amazing times we’re eating in.

I’m sure you all noticed, but residency took a lot out of me this year and I would vacillate between feeling indescribably inspired and indescribably apathetic when it came to food and cooking and recipe development. Coupled with the fact that the blogging community has changed so much in the past few years, I’m not really sure where I fit in anymore. I don’t have the energy to network or brand myself or spend hours on social media or SEO optimizing and the comparison game kind of makes me feel bad that I don’t really care about those things. It’s weird. It’s like, I don’t care but I feel guilty about not caring….so maybe I do care? Clearly I don’t have the answers, but what I do know is that overall food still makes me excited as does coming here to share recipes and little pieces of my life along the way.

So, as always, thank you for reading and following along on this journey. Happy holidays and happy new year!

Now, let’s hear it for your top 10 recipes of 2018 (plus a few extras at the end that I loved too much not to include).
