It is going to be a WEEKEND.

I have so much Christmas prep to do, it is unreal. Ten types of cookies to make, cakes, pies, and lasagnas to prep. Oh, and did I mention that we all still have runny noses and sore throats and coughs and are a total hot mess?? It’s only 7AM but I need a nap.

Even though I’m equal parts excited/horrified about all of the holiday cooking I have yet to do, I’m also starting to think about some of the healthier meals I can make this week to bridge the dinner gap between Christmas and New Year’s. Hello meal plan. I see you. Let’s dig in.

  • butternut squash kale lasagna – so hearty and comforting, and perfect for a holiday meal if you haven’t planned your menu yet!
  • curried cauliflower chickpea buddha bowl – yup, need
  • Thai lentil vegan meatloaf – never seen flavors like this in a meatloaf
  • sweet potato lentil tortilla soup – hi, yes please.
  • teriyaki stir fry with broccoli and chickpeas – so many gorgeous greens!

Happy Saturday!

Is this season whizzing by or what?? Before we know it we’ll be making New Year’s resolutions and swearing off chocolate for at least a week. We’re having a little Christmas get-together today with some friends…kind of a dry run for the double header of Christmas Eve/Christmas Day that we do every year. Except at this party I don’t have to cook dinner and we just order pizza – SO MUCH EASIER.  I just make lots of appetizers and desserts, and honestly no one is even hungry for the pizza by the end but we buy it anyway. Typical.
