New year, new meal plans!! If you’ve made a resolution to eat better, eat more vegetables, veganuary, WHATEVER then this is the place to be. Each week we will feature 5 recipes, each with tips for prepping them ahead of time and vegan/gluten-free substitutions if they’re not already, as well as a printable shopping list that is divided by recipe to make your life a little bit easier.

OMG last weekend of 2019. I’m equal parts excited and horrified. Anyone else???

We have exactly zero plans for New Year’s other than falling asleep on the couch at 9PM. I mean, maybe I’ll make some sort of fun cocktail and a cake or something but other than that we’re pretty boring. #lifewithatoddler

What I am DEFINITELY ready for is to stock my fridge with good, healthy food. Here’s where this week’s healthy vegetarian meal plan comes in handy! Let’s see what we’re cooking this week:

  • creamy vegan broccoli cauliflower soup – major comfort factor here
  • yellow curry lentils with halloumi – sign me up

  • cheesy potato taquitos – ooooohhhh yes
