We’ve had a week of THE PLAGUE around here so I can’t say I’m sorry to be done with it. First Remy got sick and just as I thought we were out of the woods, I got sick. At this point I’m just really hoping Mike doesn’t get it because the only thing worse than a sick child is a sick MAN-child.

We’re headed to t-ball today despite my low-grade fevers and then out to dinner later to celebrate Mike’s mom’s 60th birthday. And then tomorrow we have a whole lot of nothing to do! I’m excited about that.

Here’s what we’ve got on this week’s meal plan:

  • creamy tomato spinach pasta – a whole lot of comfort
  • southwest stuffed peppers – some of my favorite flavors!
  • roasted delicata squash salad – so easy, healthy, good
  • best vegetarian enchiladas – if I could eat enchiladas every day of my life, I would
  • easy one-pan veggie red curry – love a good one-pan meal!

It’s officially the time of year where I make soup once a week. Can’t say the family is too happy about it (I did not marry or give birth to soup lovers) but I sure am!!

I actually made this the first week of September and my brother, who was over for dinner, was like….”Uh, seriously. You couldn’t wait a few more weeks?!?!”

To his point, it was 90 degrees at the time.

I don’t know about you guys, but we are riding the Monday struggle bus in a MAJOR way this morning.

My internal clock (also known as Remy) didn’t wake up at her usual 6AM-on-the-dot and then I overslept my actual alarm clock by 15 minutes. Of course then Remy did get up and so we had to go to the potty, watch her Minnie doll do a song/dance routine, and do three puzzles.

All before breakfast! And more importantly, COFFEE!!!!

The overlap of summer and autumn – it is really my FAVORITE time of year for food. I just bought ten ears of the sweetest corn alongside 4 winter squash at the market and I am definitely not mad about it. The weather has also cooled off enough that I don’t cringe at the thought of spending hours in the playground with Remy. We try to go a few days after daycare if I get home early enough and then of course on the weekends. I know that soon it will be way too cold for us to go, so I’m trying to take advantage of as many good weather days as possible.

Alright, we have to rush to get ready for tee-ball, so let’s get talking about the food! Here’s what we’ve got on this week’s meal plan:

  • the BEST vegan chili – would love a big bowl of this with some cornbread on the side
  • vegan stuffed shells with tofu ricotta – so great to have a pan of this in the fridge ready to go
  • loaded vegetarian sloppy joe baked sweet potatoes – football food for vegetarians!
  • spaghetti squash stir fry – reminder that I really don’t use spaghetti squash enough
  • vegan taco bowls – big heart eyes for these

Don’t be mad but I’ve been waiting to share this with you since LAST YEAR. I made it towards the end of winter/early spring. Asparagus was just coming into season and everyone was all FAVAS! ARTICHOKES! GREEN THINGS! SALADS!!!!!!!

It just felt like too big of a distraction. I mean, it’s really hard to get excited about LENTIL SOUP when you can be eating something that’s not a root vegetable for the first time in months, am I right?
