    Unripe chalky mango is the worst!!! It’s so disappointing. I do have a package of soba noodles in my pantry…

    Unripe mango is the pits, you are right. Chalky is a great word for it! This soba dish looks wonderful – great combination of flavours!

    I’ve taken a bite of unripe mango, so stringent! Although it’s common to eat them green in some countries like Thailand.

    I am sadly lacking any soba noodle skills. I always make the same sad soup. This inspires me to break out of my noodle hum drums… GREG

    unripe mango = no good. I have some soba noodles in the freezer. This would be perfect! BTW…the Spicy Chipotle Honey Chicken with Sweet Potatoes and Winter Squash was incredible! Hubby kept saying with each bite how delicious it was. Thank you!

    This is my first time here and I’m glad I popped by because your recipes are delightful! I have a pack of soba left and as I was getting sick with the normal peanut sauce and mirin dips, this came at the right time – I’d never had thought of an eggplant and mango combo!

  31. I loooooooove that photo. The way the noodles are and the fork and not too much on the plate, it’s just perfect. (And looks delicious too of course!)
