Happy Saturday friends!!!

I am SO happy to have two days off after last week’s working weekend. Today we are celebrating by going for a run! It is a Summer Streets weekend here in the city and so Park Avenue is closed off to traffic so that runners and bikers and walkers can use it for their exercise. It’s AMAZING. We’ve been doing the same weekend running route for a few months now and so it will be a welcome change. Then we’re going to my in-laws’ to spend some time at their pool! Sunday is wide open still, and I’ve basically only got plans to make a pie. What else is new, haha???

Here’s what we’ve got on this week’s meal plan!

  • one pot tomato basil quinoa – so summery!
  • pasta salad with lemon poppy seed dressing – never seen a dressing like this on pasta before
  • chickpea and lentil taco bowls – meal prep perfect
  • roasted eggplant and hummus tartines – shockingly easy and so yummy
  • sweet potato and black bean enchiladas – LOVE these flavors

Part of that involves forgetting everything you thought you knew about roasted peppers, especially the storebought premade jar kind. Not that there’s anything overtly wrong with those but once you try these peppers you will quickly realize that there is also not a whole lot of anything right.

  • farmer’s market salad with cherries, sugar snaps, and feta – light and fresh!
  • buddha bowls with peanut sauce – just can’t go wrong there

A lightly spiced sweet cherry streusel pie that tastes like a warm hug and is an excellent use of one of summer’s best stone fruits.

Yesterday we had friends over who were visiting from out of town. It was kind of a spur of the moment decision after we got rained out of our original plans, which were to let the kids expend all of their energy at a playground and then go out to a low key dinner.

Womp womp. This is what happens when no one has the foresight to check the weather. I mean, I didn’t even bring an umbrella with me to work yesterday which was clearly a poor life choice. Thankfully the downpour happened as I was on my way home, so I didn’t have to spend the whole day in wet shoes (THE WORST).
