Add a little bit of spice to your table with this sweet and smoky roasted sweet potato salad with cranberry-chipotle dressing.
We’re gonna be predictable in a totally unpredictable way.
Salad on a Monday? Predictable.
Potato salad on a Monday? Unpredictable.
Potential Christmas breakfast/lunch/dinner/dessert recipe the day before the day before Christmas? Predictable.
NOT A COOKIE RECIPE the day before the day before Christmas? Unpredictable.
See? We are totally living on the edge.
From the safety of our own homes.
Today I’m even going to take most of the day off from work to stay home and bake things that I haven’t decided on baking yet.
Wild.And.Crazy. It’s the only way to live it.
This sweet potato salad is also a bit of a wild child.
Caramelized roasted veg sweetness part with tart tangy spicy cranberry chipotle dressing and nutty earthy crunchy toasted pepitas.
It’s like a flavor party. Nay, a flavor rave (glo-sticks and all). In your mouth.
Even if you don’t have time to make it for The Big Day, I highly recommend it as part of your post-holiday cleanse. Because, did I mention it’s super good for you too?
Oh yeah. That. Bonus points all around.

- 2½ lb sweet potatoes, peeled and cut into 1-inch cubes
- 3 tbsp olive oil, divided
- ¾ tsp salt
- ½ tsp freshly ground black pepper
- ¾ cup fresh or frozen cranberries
- ¼ cup water
- 2 tsp honey
- 1 chipotle chile, minced (about 1 tbsp)
- 1 tsp adobo sauce (from chile)
- ½ cup pepitas
- ¾ cup chopped scallions
- ¼ cup fresh cilantro, minced
- Preheat oven to 450.
- Toss the sweet potatoes with 2 tbsp olive oil, salt, and black pepper. Arrange on a parchment-lined baking sheet in a single layer. Bake for 20-30 minutes or until tender, stirring after 15 minutes.
- For the dressing, place the remaining tbsp of olive oil, cranberries, water, honey, chipotle, and adobo sauce in a saucepan. Place pan over medium-low heat and bring to a boil. Cover, reduce the heat, and cook for 10 minutes or until the cranberries pop, stirring occasionally. Remove from the heat. Mash with a fork until chunky or puree in a food processor.
- Toast the pepitas in a medium skillet until lightly browned.
- Toss together the roasted sweet potatoes, pepitas, scallions, cilantro, and dressing. Season to taste with salt and pepper.
This is my kind of potato salad! Let’s eat lots and lots of this so that we can eat five million cookies for dessert:-)
I am loving the sweet and spicy with this! And it’s such a pretty dish too 🙂
I’m not really much of a cranberry fan, but throw the word Chipotle in there and I’m sold! I do need to get to the grocery store though because about all I have in my house is a sweet potato. I wish I was acting as wild and crazy as you are today, but I’m stuck at work for the time being. Maybe later 🙂
I love that all the sweet compliments the spicy and the colors just pop! I think this is a more anytime type of potato salad!
Sweet potato salad looks great! Happy baking today and all days! Enjoy the holidays!
What a beautiful salad! I could eat this every day!
This is going to be my dinner tonight! I have all the ingredients and can’t wait to make it! It looks so good and I am loving the chipotle in it!!!
Absolutely beautiful! And here I am, arriving early in the lab, not without falling on my ass in front of the building. Brazilians and snow is a dangerous combo.
a day that starts like that can only get better, but I wish I had a huge serving of this salad waiting for me at lunchtime….
looking forward to your report on wild baking day!
Cleaning the entire house on Sunday. Unpredictable. The kids messing it up 30 minutes later. Totally predictable. I might make 10 batches of cookies for Santa just to keep them confined to the kitchen.
I want this salad. Completely predictable.
You’ve just taken potato salad to a whole new level that I’m totally loving!!
Joanne, you’re send from heaven. Really, you did it again: saving my party!!! Guess what salad I will be bringing in with Xmas-potluck. And guess how much will be really put on the table áfter tasting ……. My mouth is drooping already 😀
I love all of the colors in this salad, Joanne! Great flavor combo, too. Merry Christmas!
Can I trade all my cookies with this gorgeous salad? It looks so dang inviting!
I totally just switched out the sweet potatoes I was going to make for Christmas dinner for these. What a great recipe!
Merry Christmas dear Joanne, look delicious like always:)))
Have a nic etime with family and the boy!
Oh I like this unpredictableness!! What a great potato salad. I am baking cookies today and tomorrow I haven’t decided on (well until I saw triple chocolate crinkles this morning) too.
I just love the way you write your posts. Did I ever tell you that? They are my favorite. 🙂
Merry merry Christmas, friend!
By this point, I’m sick of seeing cookie recipes. I’m happy to see a salad because there is a serious lack of veggies in my life this time of year.
I love that when I look at my blog reader and all the pictures, I can easily spot a Joanne recipe This looks delicious!
I love all the sweet and spicy going on here. Perfection!
That sounds so delicious!
i am always up for potato salad like this one. I cant wait to see what kind of goodies you will bake today.
WE love anything with roasted sweet potatoes , and this sounds AMAZING!

Yes please! All the sweet potatoes! For some reason I never think to make mine into potato salad, but this is such an obviously good idea. Must try!
The only things that’s predictable is how awesome this salad looks. Yum!
This looks delicious! And I love all the colors in there – what a pretty salad to have out on a holiday spread! And I need a little more salad in my life these days – cookie overload!
Whoa, living on the edge in the best possible way! No, seriously, this recipe is fantastic, and I’ll probably be eating it all throughout the winter.
I like this predictable unpredictability. Or is it unpredictable predictability? Either way, I love the look of this salad!
I love how you added pepitas! For some (good) reason, salads taste so much better with some crunch from nuts and seeds.
I love the vibrant colour of the salad and how festive it is with the cranberry dressing. Good to hear you were able to take some time off work for a day in the kitchen xx
I love sweet potato & chipotle together. This looks delicious!
haha potato salad on a Monday?! LOVE! Especially this one…there are so many fun ingredients!
I love this festive and colorful salad. Sweet potatoes are one of my favorite foods!
Beautiful and delicious looking,, Joanne!

And sweet potatoes are perfect in anything!
Cranberry and chipotle? Who would have thought it..so clever, so natural. Really lovely recipe. X
Now, this is what I call a great potato salad! It sounds delicious and it’s super beautiful and colorful as well!
Merry Christmas! x
what lauren (our brownie queen) said above!
I could easily just drink that dressing!
Merry Christmas to my little runner girl!
Love you kiddo!
I’ve already gotten that post holiday cleanse planned. 🙂 This looks so good!
Love when things are unpredictable! And I especially love a wholesome salad full of cranberry and sweet potato. Have a wonderful holiday, Joanne!
Great flavor combo – this would make an awesome Christmas (or Thanksgiving) lunch before the food insanity starts. Merry Christmas Joanne 🙂
Hope that you had a fun day baking. This salad sounds great 🙂
I needed a side dish to bring to my MIL’s house tomorrow and this looks so very good! Thank you for sharing, Joanne. I hope you and your sweet man have a beautiful Christmas!
I’ve so missed your sense of humor girlie! This salad sounds totally wonderful and perfect for the holidays. I hope you have a very Merry Christmas. I’m so happy for you and the boy – congrats again on your engagement!
What a gorgeous, gorgeous mix of flavours! I will definitely be making this…albeit probably not for tomorrow (and I certainly can’t wait until next Christmas). Happy holidays to you Joanne!
I love the idea of cranberry and chipotle dressing! Sounds divine! Pinned. Have a wonderful holiday Joanne! 🙂
There is so much awesomeness going on in this dish! Sweet potatoes (of course 😉 ) with tart cranberries and pumpkin seeds and a hint of spice. This is so creative and would make a colorful addition to any holiday table.
Wishing you and your family a wonderful holiday season, Joanne!
This sounds delicious and so healthy. I love the colors.
This looks toooo good. And so excited I can eat it! I’m on this lame anti-candida diet at the moment and can’t eat sweeteners or fruit (except cranberries!). Definitely going to make it, and I can easily sub the honey for yacon syrup (the only sweetener I can have too!)
Thank you 😀
I always feel wild and crazy when I haven’t decided what I want to bake. And then I get frustrated and have so much trouble deciding, I usually make nothing 🙁 Sweet potato salad is the best! Are those purple sweet potatoes? I’m having sooooo much trouble finding those right now. Merry Christmas, Joanne!
I’ve never even thought of making a sweet potato salad, but it’s SO brilliant!
Sweet potatoes and cranberries are such a good combo! Even their colors look so pretty together 🙂 What a tasty dish!
I would eat potato salad any day of the week, I love all sorts of potatoes esp. Stokes Purple Sweet Potatoes. Pepitas are a lovely addition to the salad – sweet, tangy and spiced salad (except honey!) Cranberries and sweet potatoes combine very well together as a festive dish! Wishing you a Happy New Year, Joanne! Here to 2014!
Looks delicious! What are the chunks of reddish things that look like bacon or pepperoni??? Or are they just squares of squash that got more chipotle on them?
Some of them are purple sweet potatoes! But yes, otherwise it’s just chipotle. 😛
Mmm, this sounds amazing!
it’s like thanksgiving all over again! or, more accurately, the thanksgiving i wish i had had–great recipe! 🙂
Oh yum, I love roasted sweet potatoes 🙂 I bet this tastes amazing!
This is so beautiful! And healthy, too? Awesome!

Is this a warm salad or a make ahead and serve cold salad?
Never mind – I just read down further on the list and discovered the answer. The salad looks great by the way.
Just wanted to stop by to say thanks. I’ve made this recipe a handful of times every fall for the last 6 years and it’s always a crowd fave. Gorgeous and delicious!
