Fried Halloumi, Asparagus, Zucchini, and Roasted Cherry Tomatoes with Basil Oil

This three day weekend was super confusing for me on a number of levels, but mostly because I was working nights, didn’t quite sleep enough, and have no sense of what day it is. And OF COURSE because I had off last night, I totally flipped my schedule back from nights to days. Just as I was getting used to it.

Sleeping at a time that my circadian rhythm intended felt so good in the moment, but tonight when I have 8 admissions to do…it’s going to feel so bad.

Oh well.

Happy Memorial Day weekend!! Hope you’re out in the sun, wearing good sunscreen, eating ice cream, etc. It’s supposed to get to NINETY DEGREES here on Sunday, which sounds alternately disgusting and amazing. Fingers crossed they turn the sprinklers on at the kiddie parks, because this mama is going to need it. ALSO fingers crossed that a lot of people will be leaving town for the weekend and so the hospital will be less busy. I’m working the night admitting shift all weekend long and it would be SUPER if I could have some down time to sleep. We’ll see.

I’m sure you’ve all got your bbq plans figured out, but here’s some other fabulous summery inspiration for the week!

    • vegan mediterranean chickpea “meat”balls – pass me a big bowl.
    • make ahead bean burritos – would love these for easy breakfasts
    • red curry zucchini noodle bowls – sluuurrrppp!
    • vegan power mac and cheese – hi. yes please.
    • greek super grains salad – to end the week on a healthy note!!

Happy eating!

Baby Spinach Salad with Dates and Almonds

Allow me to (re)introduce you to my FAVORITE salad!!!

It’s the salad I make for all life occasions. Every holiday I’ve hosted, every birthday party, every time I need a little summin’ summin’ to make a weeknight dinner extra special, every time I need a pick-me-up for lunch.

This is The One.

If I weren’t already spoken for, I’d marry it. Not even an exaggeration.

Hi friends!

I hope it’s as warm where you are as it is here because I am LOVING this weather situation. Yesterday we went to the park after I picked Remy up from daycare and it was so great to let her burn some energy before dinner/bed. Also so excited to switch out my winter clothes this weekend and get rid of some of the stuff I didn’t wear all season. SPRING CLEANING, at its finest.

Let’s see what we’ve got on this week’s meal plan!

  • blackened mushroom tacos – very into it
  • avocado pesto zucchini noodles – so happy for pesto season!
  • baked huevos rancheros – breakfast-for-dinner FTW
  • white bean, basil, and arugula mason jar salad – totally going to make this for easy work lunches
  • roasted spring vegetable farro bowls with Thai green curry pesto – such a fun twist!

Happy eating!

A hot pink strawberry dream cake with real strawberries in both the cake and the frosting that will satisfy the most ardent strawberry lover.
Hot Pink Strawberry Dream Cake

Remy had exactly one request for her birthday this year and that was a PINK CAKE.

(After, of course, spending weeks requesting a green cake and then a red cake. Just to keep me on my toes.)

I tried to elicit whether that meant she wanted a strawberry cake or a raspberry cake or a rhubarb cake….but all I got was, “JUST PINK”, said in adamant three-nager shrieks while stampeding around the apartment. So I searched the internets high and low, and while there were a few contenders, I eventually landed on this strawberry dream cake.

And, it was perfect.
