If you thought lasagna was merely a winter comfort food, then you should think again. It can be adapted for any season, as proven by the delicious asparagus I posted over at Marcus Samuelsson’s blog! Please check it out!

I love asparagus in lasagna! The sun-dried tomato pesto sounds great too. That Giada, she makes some good food–and so do you!
I prefer veggie lasagna to traditional lasagna and this looks like the perfect lasagna to enjoy during summer.
I’m way behind in commenting, but I’m headed off to catch up on some of your posts.
Drooooooling.
I just made a stuffed cabbage that really seemed like a winter food but I said screw it! I’m going to buck the system, throw caution to the wind, go against the grain!

With cooler weather still imminent lasagna hits the spot.
Lasagna…winter food. Pfft. That’s just crazy talking. Yay for asparagus season!
Oh my word. I have a big jar of sun-dried tomatoes begging to take up residency in this lasagna.
You know what’s funny? I don’t like sundried tomatoes, but I do like sundried tomato pesto!
Nothing wrong with a little comfort food from time to time. WE all need comfort food, even in the spring and summer:)
Woooohoooooooooooooo! I love anything with pasta and cheese, especially if there’s lots of veg! So pretty, Joanne.
Goodness me! Your lasagna looks so mouthwatering. Marvelous job on taking such a beautiful shot!
Looks amazing! Sun-dried tomato pesto sounds dreamy.
Yum, looks amazing. I am such a big fan of pesto that I can have it almost with anything 🙂
This sounds awesome. The ingredients you’ve used must make it very fresh light tasting for a lasagna. Love the pictures and that turquoise plate!

I’ve been loving all the veggie recipes lately, Joanne! This is no exception — love the colors and anything with sun-dried tomatoes is a big YES in my book.
Dear Joanne, As I am reading this post, I am hungry! This lasagna looks so good! Just wonderful. Have a blessed weekend. Catherine
pesto never wows me, but then again, i’ve never had a sun-dried tomato version! very creative and delicious, joanne!
I just saw another lasagna post and I was thinking the exact same thing. Lasagna should not be just a winter food. I’m so excited that this uses sundried tomatoes because I have a bunch to use up!
looks absolutely divine!
You have changed my mind about baking lasagna in 98 degree, 95% humidity levels in South Carolina…..who cares how hot it gets with a lasagna such as yours! Blissful heat! I wish you didn’t live so far! We need great cooks like you down here! Grazie!
Exactly, just bake it outside in your gri—–
Oh yeah, nevermind 😉
It looks great! Alexis and I visited Larry’s (Big Dude’s Eclectic Ramblings) today and had asparagus picked straight from the ground. WOW it was so flavorful compared to store bought. it would go great in your lasagna.
This looks delicious! Love the freshness of the asparagus on a normally heavy dish. Im such a sucker for Italian food and just happen to have asparagus in the fridge 🙂
That is a beautiful, spring lasagna. The asparagus is a wonderful idea.
Beautiful–asparagus adds that touch of spring.
😉
Oh Wow, how delicious is this? Everything going on in this is perfect!
Look amazing! Almost sounds healthy =P
FYI, I’m making this lasagna tonight. Two, actually. (Freezing one for a post-baby meal.) I’m way excited 🙂
