It’s just that, there we were having a perfectly lovely weekend that involved eating ice cream-smothered waffles alongside cheddar biscuits and bowlfuls of hollandaise.

And then Mondays had to come along and ruin everything with their “back-to-work” and “no-nonsense breakfasts”.

To that I say phooey. We are going to keep the weekend spirit alive.

Mandatory Monday brunch breaks?? Happening.

Primarily in the form of French toast smothered in spring with a healthy dollop of creme fraiche on top.

Because brunch without champagne isn’t really even a brunch at all.

We’re just getting happiness all up in this Monday, one fluffy slice of French toast and giant spoonful of rhubarb-mango-liciousness at a time.

Now that’s how to start the week off right.

(PS – Easter Sunday and/or Mother’s Day. Hint hint wink wink nudge nudge. Just saying.)

French Toast with Rhubarb-Mango Compote and Creme Fraiche
 
Brunch gets extra delicious and infused with spring flavor in this French toast with mango-rhubarb compote and creme fraiche!
Yield: 4 servings
Ingredients
  • 1 tbsp butter, plus more for pan
  • 1 lb rhubarb, sliced into ½-inch pieces
  • 2 mangoes, seeded chopped into ½-inch cubes
  • ½ cup sugar
  • 1 tsp dried ginger
  • 1 loaf challah bread, cut into 1½-inch thick slices
  • 2 eggs
  • ½ cup milk
  • 1 tbsp cinnamon
  • 4 oz creme fraiche
Instructions
  1. In a large pot, melt 1 tbsp butter over medium heat. Add in the rhubarb, mangoes, sugar, and dried ginger. Bring to a simmer as sugar melts and juices are released from rhubarb and mango, cooking until rhubarb is falling apart and juices are thickened, about 10-15 minutes, stirring frequently. Remove from the heat and set aside.
  2. For the french toast, in a large bowl, whisk together the eggs, milk, and cinnamon. Dip the bread slices in the egg batter on both sides, allowing it to sit for a few seconds to absorb the liquid.
  3. In a large pan or on a griddle, melt a tbsp of butter. Add as many french toast slices as can fit and cook over medium heat, 2-3 minutes per side, until golden brown. Set aside and repeat with remaining slices.
  4. Serve French toast topped with mango-rhubarb compote and a dollop of creme fraiche.

  7. I personally have a love/hate relationships with Monday. I hat that the weekend is over but love the fact that I stay home all day Monday and usually get a lot accomplished. French toast is the way to go to beat those Monday blues for sure.

    Is rhubarb here already?? I haven’t been perusing my local farmer’s market – it’s been to darned cold to bother, only apples and bread. But I do want to make some rhubarb treats so I’ll take a look next time.

    Oh, and my favorite day of the weekday week is Monday! Tons of stuff to do that has piled up over the weekend. I am weird that way.
