OMG last weekend of 2019. I’m equal parts excited and horrified. Anyone else???
We have exactly zero plans for New Year’s other than falling asleep on the couch at 9PM. I mean, maybe I’ll make some sort of fun cocktail and a cake or something but other than that we’re pretty boring. #lifewithatoddler
What I am DEFINITELY ready for is to stock my fridge with good, healthy food. Here’s where this week’s healthy vegetarian meal plan comes in handy! Let’s see what we’re cooking this week:
- New Years black-eyed peas and greens – for luck!!
- creamy vegan broccoli cauliflower soup – major comfort factor here
- yellow curry lentils with halloumi – sign me up
- Indian roasted chickpea and sweet potato curry – so much great spicy flavor!

Wednesday
Indian Roasted Chickpea and Sweet Potato Curry from Eats Well With Others
Prep Ahead Tip: This recipe does take some time in the oven but most of it is hands off. It stores really well, so you can make it ahead of time over the weekend and reheat when ready to eat.
