Healthy Vegetarian Meal Plan – 10.17.20

I have the BEST news!!!
I passed my internal medicine board exam, woohooooooooooooo. Drinking all the wine this weekend to celebrate (not really sure how that’s different from any other weekend, but still). And I also made myself a batch of cinnamon roll blondies from Sarah Kieffer’s latest cookbook, 100 Cookies. HIGHLY RECOMMEND.
Let’s talk meal plans! This week’s is pure fall comfort. I’m so excited.
There are vegan meatballs, creamy tortilla soup, black bean enchiladas, Thai delicata squash and cauliflower red curry, cauliflower pumpkin fettuccine alfredo, and a roasted winter vegetable and quinoa salad. Happy eating!!

Macarons don’t scare me, but savory galettes that require precision, impossibly thinly sliced vegetables, and flips out of 400 degree skillets?
Uh, yeah. Feel free to NOT sign me up for that.
It’s completely irrational, I know, but that’s the only way to explain why it has taken me *years* to try this cacio e pepe potatoes anna from the Smitten Kitchen Every Day Cookbook, despite it being the cover recipe and therefore mocking me with it’s golden crispy cheesy edges every time I pull up my eCookbook on my iPad.
Healthy Vegetarian Meal Plan – 10.10.20

I just woke up from a dream that my child and her schoolmate (they do “school” in our house during the week) drew all over the walls. Like, floor to ceiling pen. Not even crayon, which would probably wash off. PEN.
Now I’m doing that thing where I’m trying not to be mad at her because she didn’t actually do anything in real life, but I’m still kind of leftover mad from the dream.
How’s your weekend going?
We have a lot of good things on this week’s meal plan, so even if you’ve got no weekend plans going (ahem, like some of us) then you can still eat well! There’s a roasted sweet potato and kale salad with my name on it, super hearty lentil sandwiches with herbed ricotta, a totally seasonal roasted cauliflower and farro salad, immunity boosting soup, weeknight friendly peanut noodles and broccoli, and a really great vegan chili. Oh and an apple cinnamon quick bread that YOU KNOW I’ll be eating for breakfast all week.
