It’s October!! What a time to be alive.

This week was so weird. I was not in the mood to do A N Y T H I N G. Not even cook.

One night we even had pasta with sauce from a jar. So unlike me, so necessary.

Our baby sitter gave her two weeks notice last Friday, which was a HUGE part of my ennui. We did find someone new, but I’m still in denial about all of it. It’s not easy getting used to a new person being in your house, especially during a pandemic. Oy. She starts on Monday so fingers crossed it will be a good fit!!

I’m feeling a little bit better this weekend, and definitely more inspired to cook and bake. Let’s get to it!

This week’s meal plan features some really great meals: buffalo cauliflower tacos, sweet potato black bean buddha bowls, wild rice soup, Indian curry chili, quick portobello pizzas, and creamy Tuscan spaghetti squash. Happy eating!
