What To Cook This Week - Week 13

Still here, still on baby watch. I will officially be 37 weeks on Tuesday so the countdown is on! I’ve been having Braxton-Hicks like crazy, so we’ll see! They’re not actually indicative of anything but it’s fun to dream.

Let’s talk food! Here’s what we’re eating this week:

  • Starting off the week with a perfect-for-spring pappardelle with asparagus, peas, saffron.
  • Next up – vegetarian antipasto salad. This is great for meal prep and you can eat the leftovers for lunches all week long!
  • On Tuesday we’re making loaded vegetarian tortilla soup – a forever favorite.
  • Sticky sweet Thai chili tofu stir fry is on the menu for Wednesday – literally the definition of an easy weeknight meal.
  • Finally, we’re closing out the week with za’atar crusted halloumi and sumac veggie bowls!
  • For dessert we’re making Kentucky bourbon bundt cake. I can’t tell you how much I love this cake…it’s the ultimate.

The period between Valentine’s Day and the Fourth of July is basically just one nonstop birthday celebration in our family. I kick things off in February, then my husband, his grandmother, and my sister have birthdays in March, Remy and my cousin are in April, my brother is in May and my mother is in June. There are probably even some I’m forgetting because I am horrible at keeping track of the birthdays in my husband’s family.

Considering that I usually end up baking at least THREE cakes for Remy (one for her actual birthday, one for each side of the family’s celebration, and *tentatively* one for an actual friend party this year) and then one for at least every one of the aforementioned individuals…that is a lot of cake.

What To Cook This Week - Week 12

Happy spring! Here’s what we’re cooking this week:

  • Starting off the week with an easy one pot orecchiette puttanesca. So much flavor packed in here, it’s unreal.
  • Next up – my crispy tofu and vegetable kung pao stir fry. It hits all those notes of sweet, savory, and spicy. Love it!
  • On Tuesday we’re making a spinach and pinto bean enchiladas yay!
  • Greek avgelemono soup is on the menu for Wednesday – it has such a fresh flavor and the best texture.
  • Finally, we’re closing out the week with pizza! Mozzarella and kale Caesar pizza, to be precise.
  • For dessert we’re making salted butterscotch blondies – classic.
